Instant Pot® Turkey, Potato, and Cabbage Slaw Soup: A hearty family favorite.
Ingredients:
  • 2 tablespoons olive oil
  • 1 medium red bell pepper, chopped
  • 0.25 medium onion, chopped
  • 1 pound extra-lean ground turkey breast
  • 2 tablespoons garlic, minced
  • 2 tablespoons ground black pepper
  • 1 tablespoon steak seasoning, or to taste
  • 1 tablespoon ground cumin
  • 4 cups chicken broth, or as needed
  • 4 medium russet potatoes, peeled and cut into 1/4-inch slices
  • 0.5 cup corn
  • 0.5 cup heavy whipping cream
  • 1 (8 ounce) package slaw mix
Instructions:
  • Preheat a multi-functional pressure cooker like Instant Pot®, add oil, and choose Saute function. Sauté bell pepper and onion in the oil until onion is translucent for 5 to 7 minutes. Add ground turkey. Stir in garlic, pepper, steak seasoning, and cumin. Cook and stir until turkey is evenly browned and no longer pink, about 14 to 16 minutes.
  • Pour a generous 1/4 cup of flavorful chicken broth into the pan, and let it come to a lively boil, all the while using a wooden spoon to scrape up the delicious browned bits. Stir in the potatoes and corn, then pour in the remaining chicken broth just until the potatoes are nicely covered.
  • Secure the lid, ensuring it is locked in place. Choose the high-pressure setting as per the manufacturer's guidelines, then set the timer for 6 minutes. Let the pressure build for 5 to 10 minutes.
  • Carefully quick-release pressure following manufacturer's directions for about 5 minutes. Unlock and lift off the lid.
  • Choose the Saute function and bring to a boil. Stir in heavy cream while pouring. Introduce slaw and cook for 2 minutes. Power off the cooker and allow slaw to tenderize, approximately 5 minutes.
