Instant Pot Cabbage Roll Casserole

Instant Pot and oven create a flavorful twist on classic cabbage rolls with ground turkey.
Ingredients:
  • 1 pound ground turkey
  • 0.66666668653488 cup chopped onion
  • 1 large head cabbage, cut into 1-inch chunks
  • 1 (28 ounce) can Italian-style diced tomatoes
  • 1 (14.5 ounce) can chicken broth
  • 0.75 cup water
  • 0.75 cup uncooked long grain white rice
  • 2 tablespoons Worcestershire sauce
  • 1.5 teaspoons dried basil, divided
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 cups shredded Cheddar cheese, divided
Instructions:
  • Preheat a multi-functional pressure cooker like Instant Pot on Saute mode. Cook turkey and onion, stirring occasionally, until turkey is browned and crumbly and onion is translucent, about 5 to 7 minutes.
  • Combine diced tomatoes, cabbage, chicken broth, water, rice, Worcestershire sauce, basil, salt, and pepper in a pot. Stir occasionally until boiling, about 5 to 7 minutes, ensuring it doesn't exceed the max fill line.
  • Seal the lid securely, choose high pressure following the manufacturer's guidelines, and set the timer for 5 minutes. Let the pressure build for 10 to 15 minutes.
  • As the cabbage-rice mixture simmers, preheat the oven to 350°F (175°C).
  • Follow the manufacturer's instructions to naturally release pressure for about 8 minutes. Then, gently push the steam release knob towards the venting position in short bursts to quick-release remaining pressure.
  • Uncover the Instant Pot and blend in 1 cup of sharp Cheddar cheese.
  • In a bowl, mix together tomato sauce, sugar, and the rest of the basil. Pour half of the sauce into a 9x13-inch baking dish. Top with the cabbage-rice mixture, then pour the rest of the sauce over it. Sprinkle with the remaining Cheddar cheese.
  • Cook in the warm oven until thoroughly heated, about 25 to 30 minutes.
