Transform Grandma's cabbage rolls into a flavorful Instant Pot cabbage roll soup.
Ingredients:
  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 cup diced onion
  • 1 teaspoon minced garlic
  • 2 tablespoons brown sugar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon paprika
  • 1 teaspoon ground black pepper
  • 2 bay leaves
  • 6 cups beef broth
  • 1 medium head cabbage, shredded
  • 1 (15 ounce) can tomato sauce
  • 1 (14.5 ounce) can diced tomatoes
  • 1 cup uncooked jasmine rice
Instructions:
  • Preheat a multi-functional pressure cooker, like an Instant Pot, by selecting the Saute function. Sear ground beef, ground pork, and onion in olive oil until meat is crumbly and onions are soft and translucent, approximately 5 minutes. Add garlic, turn off Saute function, and drain any excess grease.
  • Enhance the flavors with a sprinkle of brown sugar, Worcestershire sauce, apple cider vinegar, paprika, salt, pepper, and bay leaves. Combine with beef broth, cabbage, tomato sauce, diced tomatoes, and rice. Seal the lid securely. Choose high pressure setting as per the manufacturer's guidelines and cook for 15 minutes. Let the pressure build for 10 to 15 minutes before serving.
  • Follow the manufacturer's instructions for natural pressure release, approximately 15 minutes. Unlock the lid, give the soup a good stir, and serve.
