Instant Pot® Lentil and Rice Soup - Simple, comforting, and perfect for busy nights.
Ingredients:
  • 1 cup yellow lentils
  • 1 cup uncooked white rice
  • 1 tablespoon olive oil
  • 2 small carrots, diced
  • 1 stalk celery, diced
  • 0.5 onion, diced
  • 1.5 teaspoons ground coriander
  • 1.5 teaspoons salt
  • 1 teaspoon ground thyme
  • 0.5 teaspoon dried rosemary
  • 0.25 teaspoon chili powder
  • 8 cups water
  • 1 lemon, zested and juiced, divided
Instructions:
  • Cover lentils and rice with cold water and let sit for at least 30 minutes. Then, rinse and drain before setting aside.
  • Preheat a multi-functional pressure cooker (like Instant Pot®) on Saute mode. Cook carrots, celery, and onion in oil until softened, about 5 to 7 minutes. Mix in coriander, salt, thyme, rosemary, pepper, and chili powder. Add drained rice and lentils. Pour in water and lemon zest. Seal the lid securely.
  • Follow your appliance's guidelines to choose the high-pressure setting and set the timer for 12 minutes. Allow 10 to 15 minutes for the pressure to build up.
  • Follow the manufacturer's instructions for natural-pressure release for 5 minutes, then unlock and remove the lid.
  • Incorporate the fresh lemon juice, then taste and fine-tune the seasonings. Serve and enjoy!
