Juicy pork tenderloin cooked in apple juice in an Instant Pot®, topped with a flavorful and thick gravy.
Ingredients:
  • 2 teaspoons olive oil
  • 1 (2 pound) pork tenderloin, or to taste
  • 1 teaspoon Greek seasoning
  • salt and ground black pepper to taste
  • 1 cup apple juice
  • 1 tablespoon cornstarch
Instructions:
  • Preheat a multi-functional pressure cooker (such as Instant Pot®) on the Saute function until the olive oil shimmers, about 3 to 5 minutes.
  • Season pork tenderloin generously with Greek seasoning, salt, and pepper. Sear in the preheated pot until golden on each side for about 3 minutes. Remove and set aside. Deglaze the pot with apple juice, scraping up any browned bits. Place a rack in the pot and return the tenderloin onto the rack.
  • Securely seal the lid and set cooker to high pressure following the manufacturer's directions; cook for 10 minutes. Let pressure naturally release for 10 to 15 minutes.
  • After following the manufacturer's instructions, allow the pressure to release naturally for 10 minutes. Quick-release any remaining pressure, then unlock and remove the lid. Set aside the tenderloin to rest for 5 minutes.
  • Remove 1/4 cup of liquid from the pot, mix with cornstarch to make a slurry, then pour it back in. Saute until sauce thickens, about 5 minutes. Slice pork and drizzle with sauce before serving.
