Instant Pot Baked Beans: Dried beans cooked in sweet molasses sauce with smoky bacon. A delicious side for BBQ and meat dishes.
Ingredients:
  • 1 pound dried Great Northern beans
  • 1/3 cup molasses
  • 1/3 cup brown sugar
  • 3 tablespoons Dijon mustard
  • 1/8 teaspoon ground cloves
  • 8 ounces bacon, cut into 1/2-inch pieces
  • 1 medium onion, diced
Instructions:
  • Prepare the beans: In an electric pressure cooker, combine dried beans and 8 cups of water. Seal the lid, set the pressure regulator to “Sealing”, and select the "Bean/Chili" program for 15 minutes (or manually set to "High Pressure" if needed). It will take about 20 minutes to come up to pressure before the 15-minute cook time starts.
  • After the timer goes off, allow the pressure to naturally release for 15 minutes, then quick release by turning the pressure release knob to “Venting.” Beans should be mostly cooked and slightly firm. If you plan to use bean cooking liquid, reserve 1 1/2 cups. With heat-proof mitts, drain beans in a colander. Wash and return inner pot to the pressure cooker.
  • Create a flavorful cooking liquid by mixing molasses, sugar, mustard, ground cloves, and 1 1/2 cups of water or reserved bean cooking liquid in a small bowl. Set it aside for later use.
  • In the electric pressure cooker on medium heat, cook the bacon until it starts releasing fat, for 2-5 minutes. Add onions and cook until translucent, about 5 minutes. Reduce heat if bacon browns too quickly. Cancel when finished sautéing.
  • Combine the cooked beans and their liquid with the bacon and onions in the pot. Seal the pressure cooker and set it to cook on high pressure for 15 minutes using the "Bean/Chili" program on an Instant Pot or manually set it to "High Pressure" if needed. The cooker will take about 15 minutes to come up to pressure before the 15-minute cooking cycle starts.
  • After the cooking program finishes, allow the pressure to release naturally for about 30 minutes. Avoid using the quick release method to prevent sputtering of the thick cooking liquid from the pressure release valve.
  • Enjoy the beans warm: For a delicious experience, reheat gently on the stovetop, in a low oven, or in the microwave.
