Transformed old family favorite into quick, soak-free Instant Pot baked beans recipe.
Ingredients:
  • 8 cups water
  • 1 pound dry navy beans, rinsed and picked through
  • 6 ounces salt pork, diced
  • 6 ounces bacon, cut into small pieces
  • 1 small onion, minced
  • 1.5 cups water, divided
  • 0.33333334326744 cup molasses
  • 0.25 cup ketchup
  • 0.25 cup brown sugar
  • 1 tablespoon yellow mustard
Instructions:
  • Place beans and water in a multi-functional pressure cooker like an Instant Pot. Seal the lid, select high pressure, set the timer for 15 minutes, and let the pressure build for 10 to 15 minutes.
  • After 20 minutes of natural pressure release, follow the manufacturer's directions to quick-release the remaining pressure. Remove the lid, drain, and rinse the beans with cold water. Clean the Instant Pot insert and return it to the pressure cooker.
  • 1. Start by heating the Instant Pot using the Sauté function. Once the display shows "Hot," add olive oil and let it shimmer for 2 to 3 minutes. 2. Add the salt pork, bacon, and onion, and cook until the fat begins to render, about 1 to 2 minutes. 3. Pour in 1/2 cup of water to deglaze the pot, scraping off any browned bits from the bottom. 4. Turn off the Instant Pot.
  • Combine molasses, ketchup, brown sugar, mustard, and 1 cup water in a small bowl. Add the cooked beans to the pot with the ketchup mixture. Gently stir to mix. Seal the pressure cooker lid, set to high pressure for 35 minutes according to manufacturer's instructions, and allow pressure to build for 10 to 15 minutes.
  • Follow the manufacturer's instructions to naturally release pressure for about 20 minutes, then quick-release any remaining pressure. Unlock and remove the lid. Beans will thicken as they cool. Serve hot or freeze for later.
