Instant Pot Lentil Chicken Noodle Soup with zesty dill seasoning for a delicious twist on two classics.
Ingredients:
  • 1 medium onion, chopped
  • 10 baby carrots, sliced
  • 2 stalks celery, sliced
  • 1 tablespoon all-purpose flour
  • 6 cups chicken broth
  • 1 pound cubed, cooked chicken
  • 1 cup lentils
  • 1 teaspoon dried parsley flakes
  • 1 teaspoon paprika
  • 1 teaspoon dried dill
  • 0.5 teaspoon thyme
  • 1 cup egg noodles (such as No Yolks®)
  • 1 tablespoon lemon juice
  • salt and ground black pepper to taste
Instructions:
  • Preheat a multi-functional pressure cooker on Saute mode. Melt butter and saute onion, carrots, and celery for 2 minutes. Sprinkle flour over the veggies, stir well, then turn off the heat.
  • Combine the broth, chicken, lentils, parsley, paprika, dill, and thyme in the pressure cooker. Seal the lid securely, set to high pressure for 8 minutes following the manufacturer's guidelines, then wait for 10 minutes for pressure to rise.
  • Following the manufacturer's instructions, perform a quick pressure release for about 5 minutes. Turn off the pot and uncover. Add noodles and lemon juice, then allow to sit for 15 minutes or until noodles are tender. Serve in bowls and season with salt and pepper to your liking.
