Instant Pot Brussels sprouts: Roasted with olive oil, onion, and broth until tender-crisp for a quick and delicious side dish.
Ingredients:
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 pound whole Brussels sprouts
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.5 cup vegetable broth
Instructions:
  • Preheat a multi-functional pressure cooker, like an Instant Pot, using the Sauté function. Heat olive oil and sauté onion until translucent, about 2 minutes. Add Brussels sprouts and cook for 1 minute. Season with salt and pepper, then pour in vegetable broth. Seal the lid, choose high pressure, and set the timer for 3 minutes. Allow pressure to build for 10 to 15 minutes.
  • Release pressure using the quick-release method following manufacturer's instructions for about 5 minutes. Unlock and lift off the lid.
