Instant Pot quickly roasts whole chicken for easy dinner. Turn drippings into savory gravy for serving.
Ingredients:
  • 1 (5 pound) roasting chicken, rinsed, giblets removed
  • 1 teaspoon ground black pepper
  • 1 pinch dried rosemary, or to taste
  • 1 pinch dried parsley, or to taste
  • 2 tablespoons extra virgin olive oil
  • 1 cup chicken stock
  • 2 teaspoons cornstarch
Instructions:
  • Coat chicken completely with a flavorful blend of salt, pepper, garlic powder, rosemary, and parsley.
  • Preheat a multi-functional pressure cooker such as an Instant Pot on the Sauté function with olive oil. Place chicken in the pot, skin-side down, and sear until golden, approximately 5 minutes. Flip chicken with tongs and brown the other side for an additional 5 minutes. Remove chicken and set aside. Deglaze the pot with chicken stock, scraping off any browned bits. Turn off the Sauté function.
  • Insert the rack into the pot and position the chicken on top, breast-side up. Seal the lid securely, choose the Poultry setting, and set the timer for 28 minutes. Let the pressure build for 10 to 15 minutes.
  • Follow manufacturer's instructions to naturally release pressure for 10 to 40 minutes. Once pressure is released, carefully unlock and remove the lid. Transfer the chicken to a carving board to rest.
  • Heat up the Sauté function and stir cornstarch into the pot with the stock and drippings to create a delicious gravy.
