Flavorful vegan jackfruit chili made effortlessly in an Instant Pot for a crowd-pleasing dish loved by all!
Ingredients:
  • 1 teaspoon paprika
  • 0.5 cup dry black beans
  • 0.5 cup dry kidney beans
  • 0.5 cup dry pinto beans
  • 10 ounces frozen green jackfruit, thawed and drained
  • 2 tablespoons olive oil
  • 0.5 cup cremini mushrooms, chopped
  • 0.5 cup oyster mushrooms, chopped
  • 1 large yellow onion, chopped
  • 2 fresh jalapeno peppers, chopped, or to taste
  • 2 cloves garlic, chopped
  • 1 (15 ounce) can crushed tomatoes
  • 7 ounces fresh pumpkin - peeled, seeded, and chopped
  • 1 cup fresh corn kernels
  • 1 cup dark beer
  • 0.25 cup strong brewed coffee
  • 2 tablespoons tomato paste
  • 3 tablespoons liquid smoke flavoring
  • 3 tablespoons dark soy sauce
  • 2 tablespoons bitters (such as Angostura®)
  • 1 tablespoon brown sugar
  • 1 tablespoon dried Mexican oregano
  • 1 tablespoon crushed dried chipotle pepper
  • 1 tablespoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cinnamon
  • salt and ground black pepper to taste
Instructions:
  • Separately soak the black beans, kidney beans, and pinto beans in warm water for 1 hour to reduce gas-producing compounds. Then, pat the drained jackfruit dry.
  • Preheat a multi-functional pressure cooker like Instant Pot using the Saute function. Heat olive oil in the pot and brown jackfruit pieces for 5 to 7 minutes. Add cremini mushrooms, oyster mushrooms, onion, jalapenos, and garlic. Saute until onion is soft, about 5 to 7 minutes.
  • Switch off the Saute function. Combine drained beans, crushed tomatoes, pumpkin, corn, beer, coffee, and tomato paste. Use the empty crushed tomato can to measure and pour in cold water. Add liquid smoke, soy sauce, bitters, brown sugar, Mexican oregano, chipotle pepper, cumin, coriander, smoked paprika, paprika, cinnamon, salt, and black pepper. Stir well. Seal the lid, choose the Stew function following the manufacturer's guidelines, and set the timer for 25 minutes. Wait for pressure to build for 10 to 15 minutes.
  • After letting pressure release naturally for 10 to 15 minutes as per manufacturer's instructions, unlock and remove the lid, then give it a good stir.
