Savoury Irish boiled dinner with tender corned beef, cabbage, creamy potatoes, carrots, and onions simmered for a fuss-free meal.
Ingredients:
  • 2 large onions
  • 1 (5 1/2 pound) corned beef brisket
  • 10 carrots, cut into 1 inch pieces
  • 2 heads cabbage, cored and cut into wedges
  • 15 small white (Irish) potatoes
Instructions:
  • Assemble all ingredients.
  • Give the brisket a refreshing rinse under cold water and carefully place it in a spacious pot. Pour in ample water to generously cover the roast by 6 inches.
  • Peel onions and add to the pot. Bring to a boil and cook for 30 minutes at a vigorous boil. Reduce heat to medium-low and simmer gently, covered, for 3 1/2 hours.
  • Take out the onions and slice them into wedges. Put them back in the pot along with the carrots. Layer the cabbage over the roast, then place the potatoes on top. Cover and cook until the potatoes are tender, approximately 30 more minutes. Ensure the potatoes are submerged in water; if not, keep the lid on for steaming.
  • Transfer the vegetables to a serving bowl, leaving the corned beef in the pot to keep it moist until ready to slice and serve.
