Decadent brownies with Irish cream in batter and frosting, topped with toffee bits - a potluck favorite!
Ingredients:
  • 1 (20 ounce) package brownie mix
  • 0.5 cup Irish cream liqueur
  • 0.5 cup vegetable oil
  • 2 teaspoons milk
  • 2 tablespoons Irish cream liqueur
  • 1 teaspoon brewed coffee
  • 0.5 cup butter, softened
  • 2 cups confectioners' sugar
  • 1 teaspoon vanilla extract
  • 0.5 cup toffee baking bits (such as Heath Bits 'O Brickle®)
Instructions:
  • Preheat your oven to 350°F (175°C) and generously grease a 9x13 inch baking pan.
  • Mix the brownie mix with 1/2 cup of Irish cream liqueur, vegetable oil, and eggs until well combined. Spread the mixture in the prepared pan.
  • Bake in the preheated oven for about 30 minutes, until the top is dry and the edges begin to pull away from the sides. Cool completely on a wire rack after removing from the oven.
  • In a small microwave-safe bowl, combine the milk, 2 tablespoons of Irish cream liqueur, and coffee. Microwave on High until boiling. Allow the mixture to cool completely.
  • Cream together the butter and confectioners' sugar in a bowl using an electric mixer until smooth. Mix in the vanilla extract and cooled Irish cream mixture, beating well. Spread the mixture evenly over the cooled brownies and sprinkle with toffee bits evenly.
