Cream cheese and coconut confections shaped like potatoes in this unique Irish potato candy recipe.
Ingredients:
  • 4 ounces cream cheese, softened
  • 0.25 cup butter, softened
  • 4 cups confectioners' sugar
  • 2.5 cups flaked coconut
  • 1 tablespoon ground cinnamon
Instructions:
  • In a large bowl, cream together the smooth cream cheese and butter. Add in confectioners' sugar and vanilla and continue to beat until smooth. Gently fold in the flaked coconut until well combined.
  • Shape the mixture into balls or potato shapes, then coat them with cinnamon. Place them on a cookie sheet and refrigerate to set for at least 10 minutes. For a darker color, you can roll the potatoes in cinnamon again.
