Italian baked eggs

Ingredients:
  • olive oil
  • 4 large free-range eggs
  • 6 cherry tomatoes (60g)
  • ¼ x 125 g ball of mozzarella
  • 1-2 sprigs of fresh marjoram or basil
Instructions:
  • Preheat the oven to the highest temperature. Lightly grease a small skillet pan with olive oil. Crack in the eggs, place tomatoes around the eggs and tear over the mozzarella. Drizzle with more oil, season with sea salt and black pepper. Bake for 7 to 10 minutes until whites are set but yolks are runny. Top with marjoram or basil leaves and serve with hot buttered toast. Enjoy!
