Easy Italian zucchini: Coat slices in olive oil, Parmesan, bread crumbs, spices, bake. Delicious side dish!
Ingredients:
  • 2 zucchini, sliced
  • 2 tablespoons extra-virgin olive oil
  • 3 tablespoons freshly grated Parmesan cheese
  • 2 tablespoons dry bread crumbs
  • 1 teaspoon chopped fresh oregano
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and prepare a baking dish by greasing it or lining a baking sheet with parchment paper.
  • Toss zucchini slices with olive oil in a large bowl until evenly coated.
  • Combine Parmesan cheese, bread crumbs, oregano, salt, and pepper in a separate bowl or shallow dish. Coat oiled zucchini with bread crumb mixture and place closely on the baking sheet.
  • Place in the oven that has been preheated to the desired temperature for 30 to 40 minutes, remembering to flip them halfway through to ensure even browning.
