Impress with easy-to-make zucchini Parmesan boats - a fresh twist on Italian cuisine.
Ingredients:
  • 2 zucchini, cut lengthwise in half
  • 1/4 cup shredded Parmesan cheese (1 oz)
  • 1 tablespoon olive oil
  • Freshly ground pepper to taste
  • 2 tablespoons chopped fresh basil leaves
Instructions:
  • Preheat the oven to 400°F and line a cookie sheet with parchment paper.
  • Arrange zucchini halves on a baking sheet, skin side down. Top each with 1 tablespoon of cheese, then drizzle with oil and sprinkle with pepper.
  • Bake until zucchini is tender and cheese is golden brown, about 15-20 minutes. Allow to cool slightly, then top with fresh basil leaves before serving.
