Baked zucchini Parmesan with onions, garlic, marinara sauce, and gooey mozzarella - a bubbling and delicious casserole dish!
Ingredients:
  • 2 large zucchini, thinly sliced
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 (16 ounce) jar spaghetti sauce
  • 1 cup shredded mozzarella cheese
Instructions:
  • Preheat your oven to 325°F (165°C).
  • Bring a pot of water to a boil, then add zucchini slices and cook until tender. Drain thoroughly.
  • In a skillet over medium heat, warm olive oil. Add onion and garlic, sauté until onion is soft, approximately 2 minutes.
  • In a 9x12-inch casserole dish, mix zucchini, onion, and garlic together, then pour marinara sauce over the mixture and stir until well combined. Sprinkle with mozzarella cheese on top.
  • Bake until zucchini is heated through and cheese is bubbly, about 20 minutes in a preheated oven.
