Tender oven-roasted Italian beef with aromatic seasonings, perfect for a delicious sandwich on crusty bread.
Ingredients:
  • 4 pounds boneless rump roast
  • 6 cloves garlic, slivered
  • 1 cup water
  • 1 tablespoon salt
  • 1 tablespoon coarsely ground black pepper
  • 1 tablespoon crushed red pepper
  • 1 tablespoon dried oregano
Instructions:
  • Preheat the oven to a gentle 250 degrees F (120 degrees C).
  • Using a sharp knife, create slits in the roast and tuck in garlic slivers. Transfer the roast to a snug pan. Add water to the pan and generously season the roast with salt, black pepper, red pepper, and oregano.
  • Bake covered in preheated oven for 2 hours, basting occasionally. Cool in roasting pan until very rare. Wrap tightly and refrigerate overnight.
  • The following day, thinly slice the roast after removing it from the pan. Add a small amount of water to the pan and heat on the stovetop without boiling. Stir to combine the spices.
  • Once the au jus is heated, gently add the sliced beef and warm until heated through.
  • Enjoy this juicy and flavorful beef sandwich piled high on crusty Italian bread, with a side of rich au jus for dipping.
