Whip up a quick chicken couscous salad in 20 minutes for a hearty and flavorful Italian-inspired dinner!
Ingredients:
  • 2 cups ready-to-serve chicken broth
  • 1 1/3 cups uncooked couscous
  • 1 bag (16 ounces) frozen broccoli, red pepper, onions and mushrooms, thawed
  • 3 cups cubed cooked chicken
  • 1 bottle (8 ounces) fat-free creamy Italian dressing (3/4 cup)
  • Lettuce leaves, if desired
Instructions:
  • Bring the broth to a boil in a 1 1/2-quart saucepan, then lower the heat. Add couscous to the saucepan and remove it from the heat. Cover and let sit for 5 minutes.
  • Combine couscous, fresh vegetables, and tender chicken in a spacious bowl. Drizzle the flavorful dressing over the mixture and gently toss to ensure everything is evenly coated. Assemble a bed of crisp lettuce on 6 plates, then generously spoon the vibrant salad on top.
