Italian sausage and capsicum pizza

Grilling pizza creates a deliciously crispy crust.
Ingredients:
  • 225g beef sausage
  • 2 x 150g pizza bases
  • Olive oil cooking spray
  • 181.50 gm tomato and basil pasta sauce
  • 250.00 ml grated mozzarella cheese
  • 250.00 ml roasted capsicum strips
  • 25g baby rocket
Instructions:
  • Preheat a greased barbecue hotplate or chargrill with hood to medium heat. Take sausage mince out of casings and divide into 2cm pieces.
  • Lightly coat both sides of each pizza base with oil, then grill them on the barbecue until one side is golden and crisp, about 2 minutes. Transfer the bases, cooked-side up, to a double layer of greased foil.
  • Spread the sauce over the bases, ensuring even coverage. Sprinkle the cheese uniformly over the sauce. Add the capsicum and sausage mince on top. Place the pizzas back on the foil on the barbecue, close the hood, and cook for 6 to 8 minutes until the mince is cooked and the bases are golden and crisp. Cut the pizzas into wedges, sprinkle with fresh rocket, and serve.
