Try this Italian Super Sub Sandwich for a quick, delicious meal with salami, turkey, pepperoni, and banana peppers - perfect for dinner, BBQs, or meal prep.
Ingredients:
  • 1 large Italian bread loaf
  • 1/3 cup mayonnaise
  • 4 ounces Genoa salami
  • 4 ounces pepperoni
  • 8 ounces roasted turkey breast
  • 6 ounces Provolone cheese
  • 2 cups chopped iceberg lettuce
  • 1/2 cup chopped tomatoes
  • 1/4 cup pickled sliced banana peppers (pepperoncini)
  • 1/4 cup chopped Kalamata olives
  • 3-4 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 2 teaspoons dried Italian seasoning
Instructions:
  • Slice the Italian loaf in half lengthwise using a serrated knife. Gently remove some bread from the top half to create space for toppings, ensuring the sandwich remains intact. Be careful not to hollow it out too much. Save the excess bread for making breadcrumbs!
  • Spread mayonnaise on the bottom half of the loaf. Layer the cured meats, turkey, and cheese in any order you prefer on top of the mayonnaise-covered half of the loaf.
  • Assemble the sandwich by chopping iceberg lettuce, tomatoes, banana peppers, and olives. Place a layer of lettuce on the top half of the hollowed loaf. Add the chopped tomatoes, peppers, and olives on top. Drizzle generously with extra virgin olive oil, red wine vinegar, and Italian seasoning. Gently press the two loaf halves together.
  • Slice the large sandwich into six equal portions. Enjoy right away or wrap and save for later. To store, tightly wrap individual portions in plastic wrap and refrigerate. Sandwiches will stay fresh for 2-3 days.
