Italian-Style Tilapia Fillets

15-Minute Italian-inspired fish fillets with olives and cherry tomatoes for a quick and delicious dinner.
Ingredients:
  • 1 lb tilapia or catfish fillets, cut into 4 serving pieces
  • 1 teaspoon salt-free seasoning blend
  • 1 tablespoon olive or canola oil
  • 1 clove garlic, finely chopped
  • 1 pint (2 cups) cherry tomatoes, cut in half
  • 1/4 cup sliced ripe olives, drained
Instructions:
  • Coat fish fillets generously with seasoning blend. Heat oil in a large nonstick skillet over medium-high heat. Cook fish for 6 to 8 minutes, flipping once, until golden brown. Transfer fish to a plate and cover to keep warm.
  • In a hot skillet, sauté garlic for 30 seconds. Add tomatoes and cook for about 3 minutes until tender and juicy, stirring occasionally. Mix in olives and serve over fish.
