Jamaican confetti rice salad

Celebrate Christmas with a refreshing Jamaican confetti rice salad filled with tropical flavors, ideal for a hot holiday gathering.
Ingredients:
  • 400.00 gm white long-grain rice
  • 1 red capsicum, diced
  • 1 green capsicum, diced
  • 1/2 pineapple, peeled, cored, diced (see note)
  • 32.50 gm shredded coconut, toasted
  • 2 green onions, thinly sliced
  • 82.50 ml chopped fresh coriander, plus extra sprigs to serve
  • 1 jalapeño chilli, halved, seeded, sliced, plus extra to serve
  • 36.40 gm extra virgin olive oil
  • 1cm piece fresh ginger, finely grated
  • 8.00 gm brown sugar
  • 2.50 gm ground cumin
  • 1.25 gm ground cinnamon
  • 1/2 tsp dried thyme
  • 1/4 tsp ground allspice
Instructions:
  • Prepare the rice according to the packet instructions until tender. Drain, rinse under cold water, and set aside in a large bowl to cool.
  • Combine vibrant capsicum, sweet pineapple, tropical coconut, aromatic onion, fresh coriander, and spicy chilli with the rice. Season generously with salt and pepper, then mix everything together until well combined.
  • Prepare the Jerk Dressing: Whisk lime juice, oil, ginger, sugar, cumin, cinnamon, thyme, and allspice in a jug until well combined. Drizzle the dressing over the salad, toss to mix, and serve with additional coriander and chili on top.
