Whip up a quick and flavorful Jerk sauce with soy sauce, lime juice, orange juice, and bold spices to marinate chicken before grilling.
Ingredients:
  • 0.5 green onion, minced
  • 0.25 cup orange juice
  • 1 tablespoon minced fresh ginger root
  • 1 tablespoon minced jalapeno peppers
  • 1 tablespoon lime juice
  • 1 tablespoon soy sauce
  • 1 clove garlic, minced
  • 1 teaspoon ground allspice
  • 0.25 teaspoon ground cinnamon
  • 0.5 teaspoon ground cloves
  • 1.5 pounds boneless, skinless chicken thighs
Instructions:
  • In a resealable container, mix together green onion, orange juice, ginger, jalapeno, lime juice, soy sauce, garlic, allspice, cinnamon, and cloves. Seal the container and shake well to combine. Add chicken to the marinade, ensuring it is evenly coated. Allow it to marinate for 8 hours.
  • Preheat the outdoor grill to medium heat and lightly oil the grate before transferring the chicken, remembering to save the marinade for later use.
  • Grill chicken until fully cooked and juices run clear, turning once, for 12 to 15 minutes at 170 degrees F (77 degrees C).
  • While you wait, let the marinade simmer in a saucepan until it thickens slightly, about 5 minutes. Once done, drizzle the sauce over the cooked chicken.
