Crowd-pleasing coffee cake with cinnamon swirl, cottage cheese, and crumb topping for a delicious twist on a classic.
Ingredients:
  • 0.5 cup flour
  • 0.75 cup ground cinnamon
  • 3 tablespoons non-dairy butter or margarine, melted
  • 1 cup brown sugar, packed
  • 2 tablespoons ground cinnamon
  • 3 teaspoons unsweetened cocoa powder
  • 1.5 cups LACTAID® Lowfat Milk
  • 3 teaspoons lemon juice
  • 2 teaspoons cream of tartar
  • 0.75 cup LACTAID® Cottage Cheese
  • 1.5 cups white sugar
  • 0.33333334326744 cup brown sugar
  • 0.75 cup non-dairy butter or margarine, softened
  • 4 large eggs
  • 4 cups all-purpose flour, divided
  • 3 teaspoons vanilla extract
  • 2 teaspoons maple extract
  • 3 teaspoons baking powder
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), then generously grease and flour a 10-cup Bundt pan.
  • Combine white sugar, flour, 3/4 cup cinnamon, and 3 tablespoons non-dairy butter in a stand mixer and blend until fully combined. Transfer the mixture to a bowl.
  • Combine 1 cup brown sugar, 2 tablespoons cinnamon, cocoa powder, and 1/4 teaspoon salt in a stand mixer and mix until fully incorporated. Then, transfer the mixture to a separate bowl.
  • Combine 1 1/2 cups of Lactaid® milk in a 2-cup measuring cup with lemon juice and cream of tartar, mix well.
  • Combine cottage cheese, 1 1/2 cups white sugar, and 1/3 cup brown sugar in a stand mixer. Beat until creamy. Incorporate non-dairy butter or margarine until smooth. Add eggs one at a time, mixing well. Stir in vanilla and maple extracts, and salt. Fold in 2 cups flour.
  • Add the milk mixture to the mixer and mix thoroughly. Incorporate the remaining 2 cups of flour and baking powder, blending until smooth.
  • Spread a layer of 1/3 of the batter in the greased Bundt pan, then sprinkle half of the swirl mixture on top.
  • Next, drizzle another third of the batter over the filling, then sprinkle the remaining swirl mixture on top. Finish by pouring the rest of the batter evenly over the top.
  • Swirl the batter gently with a knife, ensuring not to over-swirl. Sprinkle the cinnamon topping over the batter.
  • Bake in a preheated oven until a toothpick inserted in the center comes out clean, which should take between 60 to 90 minutes. Allow the baked item to cool before carefully removing it from the pan.
