Japanese pork schnitzel with teriyaki glaze

Impress loved ones with flavorful teriyaki glazed pork schnitzel.
Ingredients:
  • 4 pork schnitzels
  • 125.00 ml seasoned flour
  • 2 eggs, beaten
  • 375.00 ml panko breadcrumbs
  • 127.50 gm chicken stock
  • 125.00 ml teriyaki sauce
  • 125.00 ml mirin
  • 16.00 gm brown sugar
  • Rice, to serve
  • Snow pea sprouts, to serve
Instructions:
  • Coat pork schnitzels in flour, then dip in beaten eggs and coat with breadcrumbs, pressing to adhere. Place on a tray and refrigerate for 15 minutes.
  • In a saucepan, unite stock, teriyaki sauce, mirin, and brown sugar. Simmer over high heat until boiling, then lower heat and cook uncovered for 8-10 minutes until slightly thickened.
  • In a large frying pan over medium heat, shallow fry the pork for 3-4 minutes on each side until golden and fully cooked. Drain on paper towels.
  • Slice the schnitzels into strips, then plate alongside fluffy rice and drizzle with savory teriyaki glaze. Garnish with delicate snow-pea sprouts for freshness.
