Japanese tuna and sesame balls with wasabi mayonnaise dip

Upgrade your sushi game with Japanese tuna and sesame balls served with spicy wasabi mayo dip.
Ingredients:
  • 400.00 gm sushi rice, rinsed well, drained
  • 42.90 gm sushi seasoning
  • 185g can Tuna in Oil Italian Style, drained, flaked
  • 1 green onion, finely chopped
  • 1cm piece fresh ginger, finely grated
  • 5.30 gm soy sauce
  • 1/4 tsp sesame oil
  • 24.00 gm sesame seeds, toasted
  • Thinly sliced green onion, to serve
  • Toasted sesame seeds, to serve
  • Soy sauce, to serve
  • 163.35 gm Japanese-style mayonnaise
  • 1 tsp wasabi paste
  • 42.00 gm lemon juice
Instructions:
  • In a saucepan over medium-high heat, combine rice and 2 cups of water. Cover and bring to a boil, then reduce heat to low and simmer for 12 to 14 minutes until water is absorbed and rice is tender. Remove from heat and let it sit for 10 minutes with the lid partially on. Transfer the rice to a large glass bowl and drizzle with seasoning. Using a large metal spoon, gently lift and stir the rice for 10 to 12 minutes until it has cooled down.
  • Prepare the zesty Wasabi Mayonnaise Dip by whisking together mayonnaise, wasabi paste, and lemon juice until perfectly blended. Season with a pinch of salt and a dash of pepper for extra flavor. Chill in the refrigerator until needed.
  • Combine tuna, onion, ginger, soy sauce, and sesame oil in a bowl, stirring well to mix and gently breaking up the tuna into smaller pieces.
  • With moistened hands, form 1 rounded tablespoon of rice mixture into a small disc. Fill the center with 1 teaspoon of tuna mixture, fold sides up, and top with a bit more rice mixture to seal it. Shape into a ball, then coat one half of each ball with black sesame seeds. Place on a tray lined with baking paper. Chill for 20 minutes until slightly firm. Garnish with green onions and toasted sesame seeds. Serve with a side of mayonnaise dip and soy sauce.
