Tuna tataki with sesame and ginger dressing

Deliciously light and fresh tuna fillets - perfect for a stunning entree with minimal calories.
Ingredients:
  • 200g tuna loin fillets
  • 2 tsp sesame oil
  • 75g edamame beans, podded
  • Baby herbs, to serve
  • 42.00 gm soy sauce
  • 18.40 gm sunflower oil
  • 20.00 gm water, cold
  • 20.00 ml rice wine vinegar
  • 1 1⁄55.00 gm caster sugar
  • 1 tsp fresh ginger, finely grated
  • 1 tsp sesame oil
Instructions:
  • Coat tuna with oil and season generously. Sear in a hot pan for 30 seconds on each side for a rare doneness or to your preference. Refresh tuna under cold water, then dry with paper towels and slice thinly.
  • Quickly boil the beans in salted water, then drain and cool them in cold water before patting them dry.
  • Mix together all dressing ingredients in a bowl until well combined. Season to taste.
  • Place the tuna elegantly on a platter. Scatter with edamame beans and delicate baby herbs. Finish by generously drizzling the dressing over the top.
