Crispy Japanese-style fried chicken made with rice flour, potato starch, and sesame oil for extra crunch. Easy to find ingredients at Asian or large city grocery stores. Enhances the crispiness without altering the flavor. Your tastebuds will thank you!
Ingredients:
  • 2 eggs, lightly beaten
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon white sugar
  • 1 tablespoon minced garlic
  • 1 tablespoon grated fresh ginger root
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 0.125 teaspoon chicken bouillon granules
  • 1.5 pounds skinless, boneless chicken breast halves - cut into 1 inch cubes
  • 3 tablespoons potato starch
  • 1 tablespoon rice flour
  • oil for frying
Instructions:
  • Combine eggs, salt, pepper, sugar, garlic, ginger, sesame oil, soy sauce, and bouillon in a large bowl. Toss in chicken pieces until evenly coated. Chill in the refrigerator for 30 minutes.
  • Take out the chilled bowl from the refrigerator and combine the potato starch and rice flour with the meat, thoroughly mixing until well combined.
  • Heat oil in a large skillet or deep fryer to 365°F (185°C. Fry chicken until golden brown, cooking in batches to keep oil temperature consistent. Place on paper towels to drain briefly, then serve hot.
