Unique jelly and custard tartlets offer a delightful twist on classic trifle, perfect for a charming and elegant dessert display.
Ingredients:
  • 85g Jelly Crystals Raspberry
  • 275g packet frozen sweet shortcrust pastry cases
  • 3.00 gm gelatine powder
  • 20.00 gm boiling water
  • 240.00 gm thick vanilla custard, at room temperature
  • 126.25 gm thickened cream
  • 3.00 gm icing sugar mixture
  • 220g white chocolate
Instructions:
  • Prepare jelly according to package instructions, using only half of the prepared jelly for this recipe.
  • Prepare the pastry cases as per the instructions on the packet. Let them cool thoroughly.
  • Whisk gelatine and boiling water together until fully dissolved. Mix into custard and spoon the mixture into pastry cases. Chill for 30 minutes to set.
  • Chop half of the jelly. Drizzle over custard. In a large bowl, whip cream and icing sugar with an electric mixer until thick. Garnish tartlets with a dollop of the whipped cream.
  • Using a sharp knife, create curls from the chocolate. Gently sprinkle the chocolate curls over the cream and serve.
