Jersey Royals & wild garlic

Ingredients:
  • 500 g Jersey Royals
  • 1 handful of wild garlic leaves
  • olive oil
  • a few sprigs of fresh rosemary
Instructions:
  • 1. Preheat the oven to 200°C/400°F/gas 6. 2. Parboil the Jersey royals in salted water, drain, and steam dry. 3. Crush wild garlic leaves with sea salt, oil, and rub the potatoes. 4. Lay the potatoes on a tray, top with rosemary leaves, and roast until golden. 5. Serve with grilled meat or fish.
