Whip up these savory sausage mini quiches with any veggies for a perfect brunch treat!
Ingredients:
  • 1 (16 ounce) package Regular Flavor Jimmy Dean Pork Sausage, cooked, crumbled and drained
  • 8 eggs, lightly beaten
  • 0.25 cup milk or water
  • 0.75 cup shredded Cheddar, mozzarella or provolone cheese
  • 1 tablespoon olive oil or butter
  • 0.5 cup thinly sliced green onion
  • 0.5 cup diced sweet red pepper
  • 1 cup thinly sliced mushrooms or yellow squash
  • 1 cup frozen Southern-style hash brown potatoes or diced, pre-baked red potatoes
  • 0.25 cup Parmesan cheese
Instructions:
  • Begin by preheating your oven to 350 degrees F (175 degrees C). Next, in a large mixing bowl, combine eggs, milk or water, cheese, salt, and pepper, and set the bowl aside. Then, heat olive oil or butter in a large skillet and sauté onions and any optional vegetables desired until tender. Finally, add the cooked vegetables and sausage to the egg mixture, and stir everything well to combine.
  • Line the cupcake pan with 12 foil baking cups. Evenly divide the sausage-and-egg mixture among the cups. Bake for approximately 22 minutes until the eggs are set. Once done, take them out of the oven and optionally top with Parmesan cheese before serving.
