Indulgent keto berry-pecan cheesecake bars, a guilt-free delight for keto lovers. Perfect for satisfying dessert cravings at home!
Ingredients:
  • 1 cup pecans
  • 1 teaspoon stevia-erythritol sweetener (such as Truvia®)
  • 1 teaspoon cinnamon
  • 2 tablespoons melted butter
  • 1 egg
  • 12 ounces cream cheese
  • 0.5 cup stevia-erythritol sweetener (such as Truvia®)
  • 0.25 cup sour cream
  • 0.5 teaspoon vanilla extract
  • 0.25 cup unsweetened almond milk
  • 1 tablespoon melted butter
  • 1 cup frozen mixed berries
  • 1 tablespoon stevia-erythritol sweetener (such as Truvia®)
Instructions:
  • Preheat your oven to a perfect 350 degrees F (175 degrees C).
  • Finely chop pecans in a food processor. Mix in sweetener, cinnamon, and nutmeg. Process briefly. Transfer to a bowl and mix in melted butter. Press mixture into the bottom of a brownie pan without the divider.
  • In a large bowl, use an electric mixer to beat the egg until fluffy. Gradually mix in the cream cheese, one ounce at a time, until smooth. Add sweetener, sour cream, vanilla extract, and almond milk, and beat until the filling is smooth. Stir in the melted butter, then pour the filling over the crust in the brownie pan and insert the divider.
  • Place in the preheated oven and bake for approximately 35 minutes.
  • Heat a small pot over medium heat. Combine mixed berries and sweetener and let them simmer for approximately 5 minutes. Stir the berries and gently crush some with a spoon to release their juices. Continue cooking for an additional 10 minutes.
  • Let the cheesecake bars cool in the brownie pan for approximately 1 hour, and then generously drizzle the berry sauce over the top.
