Quick and elegant keto crème brûlée with only 4 ingredients, ready in under an hour. Gluten-free.
Ingredients:
  • 4 egg yolks
  • 1 teaspoon vanilla extract
  • 5 tablespoons low-calorie natural sweetener (such as Swerve®), divided
Instructions:
  • Preheat the oven to 325°F (165°C) for the perfect cooking temperature.
  • Combine egg yolks and vanilla extract in a bowl, and whisk until smooth.
  • In a saucepan, combine heavy whipping cream and 1 tablespoon sweetener. Heat over medium heat, whisking constantly, until it simmers. Remove from heat, gradually whisk in the egg yolk mixture until combined smoothly.
  • Evenly distribute the mixture into 4 ramekins and place them in a baking dish. Fill the dish with enough hot water to reach halfway up the sides of the ramekins.
  • Place in the preheated oven and bake on the middle rack until the mixture is set, approximately 30 minutes.
  • Gently dust each crème brûlée with 1 tablespoon of sweetener. Use a culinary torch to caramelize the sweetener for about 30 seconds. Chill until set in the fridge for approximately 10 minutes.
