Indulge in a guilt-free cauliflower pizza crust for a low-carb, keto-friendly twist on your favorite slice.
Ingredients:
  • 2 tablespoons water, or as needed
  • 2 eggs, lightly beaten
  • 0.5 cup shredded mozzarella cheese
  • 0.25 cup grated Parmesan cheese
  • 1.5 teaspoons paprika
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon kosher salt
Instructions:
  • In a food processor, pulse cauliflower florets until they resemble rice. Transfer to a saucepan, add water, and cook over medium-low heat for 10 to 15 minutes. Once cooked, transfer the cauliflower rice to a bowl and chill in the refrigerator until completely cooled, approximately 30 minutes.
  • Preheat your oven to 400 degrees F (200 degrees C) and prepare a baking sheet lined with parchment paper.
  • Place the cooled cauliflower rice on a clean kitchen towel, wrap it tightly, and squeeze out excess water. Transfer to a large bowl, then add eggs, mozzarella cheese, Parmesan cheese, paprika, oregano, and salt. Mix thoroughly.
  • Spread the cauliflower mixture onto the baking sheet and shape it into a pizza crust.
  • After baking in the preheated oven for 20 minutes, let it cool completely before delicately flipping the crust and adding toppings, if desired.
