Delicious Tex-Mex beef casserole with cauliflower rice - all the taco flavor, minus the carbs!
Ingredients:
  • cooking spray
  • 1.5 pounds ground beef
  • 2.5 teaspoons chili powder, divided
  • 2 teaspoons onion powder, divided
  • 2 teaspoons garlic powder, divided
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 2 eggs
  • 2 tablespoons heavy cream
  • 1 tablespoon extra virgin olive oil
  • 0.5 cup chopped onion
  • 3 tablespoons tomato paste
  • 1 pound frozen riced cauliflower, thawed and drained
  • 1.5 cups grated Cheddar cheese, divided
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously coat an 11x7-inch baking dish with cooking spray.
  • In a large nonstick skillet over medium-high heat, brown and crumble ground beef for 5 to 7 minutes. Add 1 1/2 tsp chili powder, 1 tsp onion powder, 1 tsp garlic powder, cumin, coriander, salt, and pepper. Stir until spices are evenly distributed and cook for an additional 4 to 5 minutes until fragrant. Remove from heat.
  • In a bowl, gently combine eggs and cream, then mix into the meat. Transfer the mixture to the baking dish, spreading it out evenly and patting it down.
  • Clean the skillet and add olive oil, heating over medium heat. Sauté onion until soft and translucent for about 2 minutes. Sprinkle in 1 teaspoon each of chili powder, garlic powder, and onion powder. Season with salt and pepper. Mix in tomato paste and cook for 2 to 3 minutes, stirring occasionally. Add cauliflower rice and cook for an additional 4 to 5 minutes. Remove from heat, stir in 1 cup of Cheddar cheese, and spread over meat in the baking dish, using a spatula to flatten the top.
  • Bake in the preheated oven for 25 to 30 minutes. Sprinkle the remaining 1/2 cup of Cheddar on top and bake for an additional 5 minutes until the cheese has melted. Allow it to cool for about 5 minutes before serving warm.
