Delicious keto tortillas for tacos or fajitas. Low-carb, grain-free, and easy to make. Taste just like traditional tortillas!
Ingredients:
  • 1 cup blanched almond flour
  • 3 tablespoons coconut flour
  • 2 teaspoons xanthan gum
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 2 teaspoons apple cider vinegar
  • 1 large egg
  • 3 tablespoons water
  • cooking spray
Instructions:
  • In a food processor, mix almond flour, coconut flour, xanthan gum, baking powder, and salt until well combined. Pour in apple cider vinegar and blend until smooth. In a small bowl, beat egg and water together. Add the egg mixture to the food processor gradually, blending until a sticky dough ball forms.
  • Place the dough on a surface dusted with almond flour and knead for about 2 minutes until soft. Wrap the dough in plastic wrap and allow it to rest for 10 minutes.
  • Shape the dough into 8 equal balls, then flatten each ball into a 5-inch disc by rolling it out between 2 sheets of parchment paper.
  • Preheat an iron skillet over medium-high heat, then lightly grease it with cooking spray. Add the dough disc to the skillet and cook for just 5 seconds on one side. Quickly flip it with a spatula and continue cooking until lightly golden, about 40 seconds. Flip again and cook for another 40 seconds.
