Indulge in homemade Key lime ice cream for a cool summer treat.
Ingredients:
  • 1 tablespoon lemon zest
  • 2.25 cups half-and-half cream
  • 0.75 cup lime juice
Instructions:
  • In a saucepan over medium heat, combine eggs, egg yolks, sugar, lime juice, and lemon zest. Stir constantly with a wooden spoon for 7 to 8 minutes until the mixture thickens to coat the back of the spoon. Remove from heat, mix in half and half until smooth. Strain through a fine sieve into a clean bowl. Chill in the refrigerator, stirring occasionally, until cool, for about 1 hour.
  • Transfer the chilled mixture into an ice cream maker and freeze following the manufacturer's instructions until it resembles "soft-serve" consistency. Place the ice cream in a lidded plastic container of one or two quarts, cover the surface with plastic wrap, and seal. For optimal taste, let the ice cream mature in the freezer for a minimum of 2 hours or overnight.
