Luscious Key lime pound cake drizzled with zesty lime glaze for an irresistible burst of flavor!
Ingredients:
  • 3 cups white sugar
  • 1 cup unsalted butter, softened
  • 0.5 cup shortening
  • 3 cups cake flour, sifted
  • 0.5 teaspoon baking powder
  • 0.125 teaspoon salt
  • 6 large eggs
  • 0.25 cup Key lime juice
  • 1 teaspoon lime zest
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 2 tablespoons Key lime juice
Instructions:
  • Preheat your oven to a cozy 300 degrees F (150 degrees C) and prepare a 10-inch tube pan by greasing, flouring, and lining it with parchment paper.
  • Use an electric mixer to blend white sugar, butter, and shortening on medium speed until creamy.
  • Combine cake flour, baking powder, and salt by sifting them together. Mix flour mixture, eggs, and cream into the butter mixture alternately, starting and finishing with the flour mixture. Beat on low speed until just blended. Gently fold in Key lime juice, lime zest, and vanilla extract. Transfer the batter to the prepared pan.
  • Bake in the oven until a toothpick comes out clean, approximately 1 hour and 30 minutes. Cool in the pan on a wire rack for 15 minutes, then remove and cool the cake completely.
  • Once the cake has cooled down, mix together powdered sugar, Key lime juice, and vanilla extract in a bowl. Brush the glaze over the entire cake immediately.
