Get the kids involved in making tasty bacon, mushroom, and cheese quiches - perfect for lunches on the go!
Ingredients:
  • 12 wonton wrappers
  • 4.60 gm olive oil
  • 100g rindless shortcut bacon, chopped
  • 100g button mushrooms, sliced
  • 1 medium tomato, deseeded, chopped
  • 20.00 ml finely chopped fresh flat-leaf parsley leaves
  • 128.75 gm reduced-fat milk
  • 62.50 ml grated reduced-fat cheese
Instructions:
  • Preheat your oven to 200°C/180° fan-forced and lightly grease two 1/3 cup-capacity, 6-hole muffin pans.
  • Place a single wonton wrapper in each hole and press down firmly to line the base and sides.
  • In a medium non-stick frying pan over medium-high heat, sizzle bacon and mushrooms until bacon is crisp and mushrooms are tender, about 5 to 7 minutes. Place in a bowl and let cool.
  • Combine tomato and parsley with the bacon mixture. Whisk eggs and milk in a jug. Distribute bacon mixture evenly among muffin holes. Pour the egg mixture over the bacon. Top with cheese. Bake for 18 to 20 minutes until eggs are set. Let cool in the pan for 3 to 4 minutes before serving.
