Savory kielbasa pairs perfectly with crispy Brussels sprouts and creamy beans for a harmonious blend of flavors.
Ingredients:
  • 1 shallot, peeled and quartered
  • 4 large garlic cloves
  • 2 tablespoons extra-virgin olive oil
  • kosher salt to taste
  • 1.5 pounds Brussels sprouts, halved
  • 2 tablespoons coarse Dijon mustard
  • 1 teaspoon olive oil
  • 1 pound kielbasa sausage, cut on the bias into 1/4-inch slices
  • 1 tablespoon olive oil
  • 0.25 cup heavy cream
  • 1 cup white kidney beans, drained and rinsed
  • ground black pepper to taste
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Lay shallot and garlic cloves on a double layer of aluminum foil. Drizzle with 2 tablespoons of extra-virgin olive oil and sprinkle with salt. Seal the foil to create a pouch. Bake in the oven until garlic is soft, approximately 30 minutes. Transfer shallot and garlic to a bowl and mash with a fork. Set aside.
  • Prepare a steamer by filling a saucepan with water just below the bottom of the steamer insert. Cover the saucepan and bring the water to a boil. Steam the Brussels sprouts until just tender, which should take 2 to 6 minutes based on their thickness. Then, set them aside.
  • In a large, deep skillet over medium-high heat, heat 1 teaspoon of olive oil. Cook the kielbasa until golden brown and crispy on both sides, about 3 minutes per side. Use a slotted spoon to transfer the kielbasa to a paper towel-lined plate to drain, leaving the grease in the skillet.
  • - Drizzle the skillet with 1 tablespoon of fragrant olive oil. Sauté the mashed shallot and garlic in the aromatic oil for 1 minute. Mix in the bold mustard and rich cream. Lower the heat to medium-low and combine the Brussels sprouts and beans. Toss to evenly coat and season with a pinch of salt and pepper. Keep cooking until everything is heated through. Present the savory kielbasa on top of the Brussels sprouts and beans.
