Whip up a refreshing Cocojito ice cream with coconut cream, fresh mint, and lime juice - no alcohol or lactose needed!
Ingredients:
  • 1 cup water
  • 1 cup white sugar
  • 1.5 cups fresh mint leaves, divided
  • 0.66666668653488 cup cream of coconut
  • 0.33333334326744 cup lime juice
  • 1 tablespoon grated lime zest
  • 1 cup sparkling water
Instructions:
  • In a saucepan, bring water and sugar to a boil, stirring until sugar dissolves and a syrup forms. Remove from heat, stir in 1 cup of mint leaves, and let steep for 30 minutes. Strain out and discard the leaves, then chill the syrup in the refrigerator.
  • Combine coconut, fresh mint leaves (reserving some for garnish), lime juice, and lime zest in a blender and blend until mint is finely chopped and mixture is thoroughly combined, approximately 1 minute.
  • Combine coconut mixture, chilled syrup, and sparkling water in a bowl, stirring well.
  • Transfer mixture into the ice cream maker and freeze as per the manufacturer's directions.
