Decadent cookies with a soft cake-like texture, gooey candy surprises, and a crispy caramelized finish.
Ingredients:
  • 1 large egg
  • 2 ounces cream cheese, softened
  • 6 tablespoons unsalted butter, softened
  • 0.25 cup white sugar
  • 0.25 cup brown sugar
  • 0.5 (3.5 ounce) package vanilla pudding mix
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon all-purpose flour
  • 1 cup cake flour
  • 1 tablespoon cake flour
  • 0.75 tablespoon cornstarch
  • 0.5 teaspoon baking soda
  • 1 pinch salt
  • 2 tablespoons miniature semisweet chocolate chips
  • 2 tablespoons white chocolate chips, chopped
  • 2 tablespoons miniature marshmallows
  • 2 tablespoons crushed chocolate sandwich cookies (such as Oreo®)
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a cookie pan by lining it with parchment paper.
  • Beat egg in a bowl, then set aside half or save for later.
  • In a stand mixer, beat cream cheese until smooth for about 3 minutes. Add butter and beat for 1 minute until combined. Mix in white and brown sugars, beating until creamy for about 3 minutes, scraping the sides as needed. Stir in pudding mix, remaining beaten egg, and vanilla extract until combined.
  • Combine 1 cup plus 1 tablespoon of flour, 1 cup plus 1 tablespoon of cake flour, cornstarch, baking soda, and salt in a medium bowl and whisk together. Gradually mix the dry ingredients into the wet ingredients on low speed, scraping down the sides as needed, until just combined. Stir in chocolate chips, white chocolate chips, marshmallows, and crushed cookies using a spatula or on low speed with a stand mixer.
  • Shape generous spoonfuls of batter into balls and place them evenly on the prepared pan.
  • Bake in the oven until the bottoms turn a beautiful golden brown, approximately 15 minutes.
  • Allow the baked goods to cool briefly on the baking sheet before transferring to a wire rack to cool completely.
