Lamb sausage rolls with tahini sauce

Try Curtis Stone's irresistible Lamb Sausage Rolls with zesty Tahini Sauce for a family-friendly meal.
Ingredients:
  • 83.33 gm thickened cream, divided
  • 1 tsp chopped fresh parsley
  • 3.75 gm paprika
  • 3.60 gm fine sea salt
  • 1.88 gm ground cumin
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp garlic powder
  • 62.50 ml plain dried breadcrumbs
  • 500g lamb mince
  • Two 24cm square puff pastry sheets
  • 6.00 gm sesame seeds (preferably black and white)
  • Mixed baby greens
  • 1 garlic clove, peeled
  • 150.00 gm tahini
  • 62.50 ml (packed) fresh coriander
  • 62.50 ml (packed) flat-leaf parsley
  • 1.20 gm kosher salt
  • 1/4 tsp freshly ground black pepper
  • 65.63 gm fresh lemon juice
Instructions:
  • Preheat your oven to 220C while lining a large heavy baking tray with baking paper.
  • Combine 3 tablespoons of cream with parsley, paprika, salt, cumin, pepper, and garlic powder in a medium bowl. Add breadcrumbs and mix well. Then, gently blend in the lamb using your hands. Don't forget to season with a touch more salt at the end.
  • Place 1 pastry sheet on a lightly floured surface. Shape half of the lamb mixture into a log along one edge of the pastry square. Roll the pastry around the lamb log, ensuring it's fully enclosed, then trim off any extra pastry. Cut the roll into 4 pieces and place them seam side down on the baking tray. Repeat the process with the second pastry sheet and remaining lamb mixture.
  • Coat the sausage rolls with the leftover cream and generously sprinkle sesame seeds on top. Bake until the pastry turns a beautiful dark golden brown and the sausage is fully cooked, approximately 20 minutes.
  • To prepare the Tahini, pulse garlic in a food processor until finely chopped. Add tahini, coriander, parsley, salt, and pepper, blending well. While the processor is running, pour in lemon juice. Scrape down the sides, then slowly drizzle in about 1/2 cup cold water until the sauce reaches a creamy consistency.
  • Take the sausage rolls out of the oven and let them cool for 5 minutes before enjoying with a side of mixed greens and tahini sauce.
