Revamp lasagne for a convenient meal prep option.
Ingredients:
  • 3 garlic cloves, crushed
  • 44.40 gm tomato paste
  • 20.00 ml Italian herbs paste
  • 100g roasted peppers (capsicum), drained, coarsely chopped
  • 1 large carrot, peeled, coarsely grated
  • 1 zucchini, coarsely grated
  • 400g can four bean mix, rinsed, drained
  • 12 fresh lasagne sheets
  • 225g cheese pasta sauce
  • 250g ricotta
Instructions:
  • Preheat the oven to 180°C. Grease a 6-cup (1.5L) ovenproof dish. In a large non-stick frying pan over medium heat, sauté the onion and garlic in oil until the onion softens, about 2-3 minutes. Add the mince and cook for 5 minutes, breaking up lumps with a wooden spoon, until it changes color.
  • Combine the tomato paste, herb paste, and tomato with the mince in the pan. Stir and cook for 2 minutes until well mixed. Add capsicum, carrot, zucchini, and ¼ cup (60ml) water. Stir and cook for 3-4 minutes until slightly thickened. Remove from heat, fold in the beans, season, and let it cool.
  • Place lasagne sheets in a large heatproof bowl and cover with boiling water. Let sit for 1-2 mins to soften, then refresh under cold water and drain. Lay lasagne sheets on a clean work surface. Spread mince mixture evenly over the center of each sheet. Fold over edges to enclose the filling. Arrange lasagne parcels seam-side down in the prepared dish.
  • Mix pasta sauce and ricotta in a bowl, then spread evenly on top of each parcel. Sprinkle with cheddar and bake for 35-40 minutes, or until the lasagne parcels are golden brown and heated through.
