Lavender champagne cocktail

French-inspired lavender sparkling cocktail.
Ingredients:
  • 80ml gin
  • 15.90 gm lemon juice
  • Champagne or other sparkling wine, to serve
  • Unsprayed lavender sprigs* (optional – see Cook’s Notes), to serve
  • 7 unsprayed lavender flowers or 1 tbsp dried edible lavender* (see Cook’s Notes)
  • 110g caster sugar
Instructions:
  • In a saucepan, combine lavender, sugar, and 1/2 cup (125ml) water. Stir over low heat until the sugar completely dissolves to make the syrup.
  • Simmer for 2 minutes, then let it sit for 30 minutes to develop flavor. Strain and chill before using.
  • In a jug, mix 3 tsp of cooled syrup with gin and lemon juice. Pour the mixture into 4 serving glasses. Top them up with Champagne or sparkling wine. Garnish with lavender sprigs, if desired, and serve.
