Lavender-infused butter dough for versatile, elegant shapes with biscuit or cookie cutters.
Ingredients:
  • 1.5 cups butter, softened
  • 0.66666668653488 cup white sugar
  • 0.25 cup sifted confectioners' sugar
  • 2 tablespoons finely chopped fresh lavender
  • 1 tablespoon chopped fresh mint leaves
  • 1 teaspoon grated lemon zest
  • 2.5 cups all-purpose flour
  • 0.5 cup cornstarch
  • 0.25 teaspoon salt
Instructions:
  • In a medium bowl, cream together butter, white sugar, and confectioners' sugar until light and fluffy. Stir in lavender, mint, and lemon zest. Add flour, cornstarch, and salt; mix until well combined. Divide dough into two balls, wrap in plastic wrap, flatten to about 1 inch thick, and chill in the fridge for about 1 hour.
  • Preheat your oven to 325 degrees F (165 degrees C). Roll out the dough on a lightly floured surface to 1/4 inch thickness, then cut it into shapes using cookie cutters or stamps before placing them on cookie sheets.
  • Bake in the preheated oven for 18 to 20 minutes or until cookies slightly brown at the edges. Let them cool on the baking sheets briefly, then transfer to wire racks to cool completely.
