Easy strawberry mascarpone dessert - perfect for any occasion.
Ingredients:
  • 500g (2 punnets) strawberries, hulled
  • 60ml (1/4 cup) blackcurrant liqueur (creme de cassis)
  • 115g (1/2 cup) caster sugar
  • 1 250g container mascarpone
  • 125ml (1/2 cup) thickened cream
Instructions:
  • Halve 250g (1 punnet) of strawberries and place them in a bowl with 2 tablespoons of liqueur. Mix together, cover, and let them macerate.
  • Chop the remaining strawberries and combine with the rest of the liqueur and sugar in a saucepan. Stir on medium heat until sugar dissolves. Cook uncovered for 6-7 minutes until strawberries are soft. Blend the mixture until smooth, then chill in the fridge for 1 hour before serving.
  • Whisk mascarpone and cream together until mascarpone thickens (it may thin out first, then thicken - avoid overwhisking). Mix in strawberry mixture until slightly thickened.
  • Layer the mascarpone mixture and macerated strawberries in four 250ml (1-cup) serving glasses, repeating the process two more times to create three layers in total. Serve immediately.
