Decadent tiramisu: Ladyfingers soaked in coffee, layered with creamy mascarpone, rum, and dusted with cocoa before chilling.
Ingredients:
  • 1 cup strong brewed coffee
  • 0.25 cup milk
  • 0.25 cup white sugar, divided
  • 3 tablespoons rum, divided
  • 36 ladyfingers
  • 2 egg yolks
  • 9 ounces mascarpone cheese
  • 2 egg whites
  • 0.125 teaspoon unsweetened cocoa powder
Instructions:
  • Combine coffee, milk, 2 tablespoons of sugar, and 2 tablespoons of rum in a bowl. Dip ladyfingers in the coffee mixture. Arrange half of the soaked ladyfingers at the bottom of a 9x13 inch pan.
  • In a bowl, whisk together egg yolks and 2 tablespoons of sugar until creamy. Gently fold in mascarpone cheese and 1 tablespoon of rum until fully combined.
  • Using an electric mixer, whip egg whites in a bowl until stiff peaks form, then gently fold them into the mascarpone cheese mixture. Spread half of the mixture over the soaked ladyfingers, layer with the remaining ladyfingers, and top evenly with the rest of the mascarpone cheese mixture. Finish by dusting the top with cocoa powder, and chill in the refrigerator for at least 3 hours.
